Кафе Прокоп в Париже, Франция. / The Pro-cop cafe in Paris, France.

Старейший парижский ресторан «Le Procope» находится на улице Ансьен-Комеди, в Латинском квартале, неподалёку от перекрёстка Одеон. Он был открыт в 1686 году сицилианцем Франческо Прокопио деи Кольтелли. С него началась история всех кофейных заведений Парижа.
Помимо классического кофе в «Le Procope» подавалось мороженое, готовящееся в семнадцатом веке из взбитых, охлаждённых в подвале сливок (по рецепту монахов замка Шантильи).
Благородная атмосфера и изысканные кушанья сделали «Le Procope» популярным местом встреч французской знати и интеллигенции. В нём пили кофе и дискутировали на литературные и философские темы величайшие умы эпохи Просвещения – Дени Дидро, Жан-Жак Руссо, Франсуа-Мари Аруэ Вольтер.
Получив славу литературного кафе, «Le Procope» и в последующие столетия привлекал к себе французских мыслителей и художников – Виктора Гюго, Оноре де Бальзака, Жорж Санд. Был в кафе «Прокоп» и Наполеон. Будущая гроза Европы забыл захватить с собой деньги и вместо них, в оплату за ужин, бросил хозяину заведения свою треуголку, сказав, что через сто лет она будет стоить больше «Le Procope». Сегодня на историческую реликвию, оценивающуюся в три с половиной миллиона евро, может полюбоваться любой посетитель ресторана.
При реставрации «Le Procope» в 1988 году исторический интерьер ресторана практически не пострадал – все хорошо сохранившиеся элементы были оставлены внутри залов, украшенных тёмно-красными и светло-коричневыми панелями.
Главным ресторанным блюдом является каплун – выращенный и откормленный по особой технологии петушок. В меню «Le Procope» много морепродуктов – филе морского окуня, бретонские устрицы, жареная форель. Местные десерты представлены итальянскими тирамису, шоколадными профитролями, ванильным мороженым.

 The oldest Parisian restaurant "Le Procope" is on Ansyen-Komedi Street, in Latin quarter, near the intersection the Odeum. It was open in 1686 sitsiliantsy Francesco Procopio of Koltelli's dea. The history of all coffee institutions of Paris began with it.

Besides classical coffee in "Le Procope" the ice cream preparing in the seventeenth century from the cream which is shaken up, cooled in the cellar was served (according to the recipe of monks of the lock of Chantilly).

The noble atmosphere and refined foods made "Le Procope" a popular place of meetings of the French nobility and the intellectuals. In it had coffee and speculated on literary and philosophical subjects the greatest minds of an era of Education – Denis Diderot, Jean-Jacques Rousseau, François-Marie Aroue Voltaire.

Having received glory of literary cafe, "Le Procope" and in the next centuries I involved to myself the French thinkers and artists – Victor Hugo, Honoré de Balzac, George Sand. I was in Prokop and Napoleon cafe. Future thunder-storm of Europe forgot to take with itself money and instead of them, in payment for a dinner, I threw to the owner of an institution the cocked hat, having told that in hundred years it will cost more "Le Procope". Today any visitor of restaurant can admire the historical relic which is estimated at three and a half million euros.

At restoration of "Le Procope" in 1988 the historical interior of restaurant practically didn't suffer – all well remained elements were left in the halls decorated with dark red and light brown panels.

The main restaurant course is the capon – the cockerel who is grown up and fattened on special technology. In the Le Procope menu there are a lot of seafood – grouper fillet, Breton oysters, a fried trout. Local desserts are presented by the Italian tiramisus, chocolate profiteroles, vanilla ice cream.
